Supported by his team of kitchen staff, he transforms high-quality raw ingredients into elegant, refined dishes. Our cuisine shines the spotlight on the food on the plate: fruit and vegetables sourced locally from Auvergne-Rhône-Alpes suppliers, river-caught Arctic char, farmhouse capon, Label Rouge-certified lamb, etc.
For the perfect accompaniment to our homemade cuisine, our wine cellar offers a rich range of wines and Champagnes, tastefully selected by our staff of connoisseurs. Our wines are available at a set price with your meal, to take away, or to cater for all your events.

The restaurant Chef and his kitchen brigade are looking to grow certain varieties of vegetables and aromatic herbs themselves in a vegetable garden on Domaine et Château de Valinches grounds using permaculture, a sustainable farming technique that yields 100% organic, pesticide-free produce. With the unparalleled taste that comes with permaculture farming, the dishes served at L’Instant Présent burst with flavour.
Our Chef and his team adopt an inclusive approach to take into account the preferences and specificities of each of our guests (vegetarian options available). The restaurant’s menu is regularly updated in accordance with seasonal product timelines, but also to offer our guests new culinary experiences each time.
